How to make kerala style puttu

Kerala Puttu
Kerala puttu is basically steamed rice flour and coconut, the combination of Kerala puttu with kadala curry (black chick piece curry)or moong dal curry. Puttu is one of the healthiest breakfasts. Traditionally puttu was steamed in coconut shells but now stainless steel puttu maker or earth pot steamer is ready to available in shops. Serve the puttu immediately after preparation. You can serve with sugar and banana also. Here we are making puttu flour at home, Nowadays flour is readily available in markets. What are the ingredients for Kerala puttu?


Ingredients


Para boiled rice-2 cups
Coconut-1 cup
Water-3 cups
Salt

Preparation

  • Wash and soak the rice for 12 hours.
  • After draining the water and keep the rice in a strainer.
  • Then add salt into the rice and mix well, grind it to a coarse powder. (It should be a bread crumb consistency and not form a dough.)
  • Heat cooker with 3 cups of water.after boiling cover the cooker without whistle.
  • Take a puttu kutti , place 1layer of grated coconut at the bottom of the puttu kutti Carefully and slowly add about 6 tbsps of the puttu powder from a height followed by another layer of grated coconut. Again you can layer with 6 tbsps of puttu powder and finish off with 1 layer of grated coconut on the top and close it with lid.
  • Place the mold over the bottom off the cooker, steam it for 10 minutes.
  • Serve it with hot,puttu is ready.
