Carrot Halwa / Gajar Ka Halwa
Carrot halwa is popularly known as gajar ka halwa,gajrela or gajar halwa. its a slow-cooked traditional Indian halwa or pudding made by simmering carrots in sugar. This recipe shares the traditional way of making delicious gajar ka halwa. This halwa recipe uses just carrot, ghee and sugar to make the halwa, you don't need khoya or condensed milk. Carrot halwa can be made very quickly. You can make this during festivals or a dessert for your parties.

What are the ingredients for carrot halwa?

Ingredients

  1. Carrot-3/4 kg
  2. Ghee-2 tbsp+1 tsp
  3. Sugar-1 cup
  4. Cornflour-1 tbsp
  5. Water-1/4 cup
  6. Cardamom powder-1/2 tsp
  7. Salt-2 pinch
  8. Milk powder-2 tbsp
  9. Nuts for garnishing
Preparation

  • Wash carrots under running water&peel them.
  • Take a pressure cooker and add carrot and 4 cup water, cover and pressure cook on a medium flame for 4 steam whistles.
  • After the steam, take it out and allow it to cool.
  • Take a steel plate or any tray, grease with some ghee and spread nuts. Keep aside.
  • In a blender add boiled carrots, blend it well without any water.
  • Heat a nonstick Kadai with 2 tbsp ghee.
  • Add carrot paste and sugar, mix it well. Cover and cook for about 7 minutes.
  • Take a small bowl to add cornflour and water mix it well without lumps.
  • Then open the lid and just mix, add cornflour mix into it. Combine well. Cook the cornflour about 2 minutes on low flame.
  • After add cardamom powder, salt and milk powder, in-between must add remaining ghee until moisture evaporates completely.
  • When it is done gajar ka halwa turns aromatic and thickens.
  • Switch off the flame, transfer to a greased plate and keep it to the refrigerator for 1 hour.
  • After one hour, run a knife around the edges of the pan to loosen the halwa. our carrot halwa or gajar ka halwa ready to cut.
