Blue Berry Glaze Cake
Blueberry cake is prepared with the combination of vanilla cake, whipped cream and blueberry glaze. It was very delicious and just melted in your mouth. This super moist cake is baked without an oven , here we are going to bake using the cooker. The secret of to this cake is the use of blueberry glaze. I love love this cake. I can't find the words to explain how delicious it tastes. If left alone this blueberry cake, who knows how much of it I will eat in one sitting.Let's see how to make blueberry cake

How to make Blue Berry Cake?


What are the ingredients for Blue Berry Cake?


Ingredients


For Vanilla cake


All-purpose flour-1/2 cup

Baking powder-1/2 tsp
Baking soda-1/4 tsp
Egg-2
Vanilla essence-1/2 tsp
Salt-2 pinch
Powdered sugar-1/2 cup
Vegetable oil-1/4 cup

For Frosting

Whipping Cream-1 1/2 cup
Blueberry Glaze-1/2 cup

For Sugar Syrup
Sugar-2 tbsp
Water-1/4 cup
Preparation
  • Sift the all-purpose flour/maida with the baking powder and baking soda in a mixing bowl sieve it well and keep aside.
  • Break the eggs to a large bowl, add vanilla essence and salt, beat well.
  • Add half of the sugar whip it again then add remaining sugar and whip until fluffy and lite yellow color. I used my electric hand mixer.
  • Now add oil to it and mix well.
  • Add flour mixture and whisk until you get a lump free smooth batter.
  • Grease the pan and dust some flour and line with butter paper. Pour the batter into it.
  • Preheat the cooker with salt.place a stand over to it.
  • place the cake pan with batter inside it and close it with a lid. Cover the cooker without whistle.
  • Keep the flame on low, bake for 20-30 minutes.
  • Check after 25 minutes and if the toothpick inserted comes out clean, then the cake is done or cook until a toothpick inserted comes out clean.
  • The vanilla sponge is ready and allow it to cool.
  • For frosting, whip cream until soft peaks form.
  • Make sure that the bowl, beater, and cream are all chilled while beating.
  • For sugar syrup, boil together sugar and water until sugar dissolves, cool and transfer to a bottle.
  • For arranging the cake, cut the cake three layers.
  • Start icing, once your cake is completely cooled.
  • Spread some whipped cream over one layer cake, add some blueberry glaze and cover with the other layer.
  • Spread the Sugar syrup, whipped cream and blueberry glaze cover with the last layer, whipped cream thickly over the whole cake.
  • Add some whipped cream into a piping bag, and make your own designs.put the Blueberry glaze on top for decoration. The final look picture is below.
