How To Make Kerala Appam

Appam is God's own country's revered food and most popular among Kerala breakfast.recipes that are healthy and easy to make these white lacy pancakes. Soft on touch and fluffy center. Appam recipe uses minimal ingredients, simple to make and usually served with vegetable stew, chicken curry, chicken roastmayonnaise chicken curry, beef curry, sweetened coconut milk, and Kerala egg curry etc..Appam cooking in a non-stick appam pan or non-stick Tawa. Here I am showing appam in Tawa. I have prepared an appam recipe with baking soda. Appam is staple breakfast in Tamilnadu, Kerala as well as in some parts of Srilanka. When you have the ferment appam batter in refrigerator, appam making is a breeze in the busy mornings. Secondly, the appam batter fermentation is a biochemical process, so the longer you leave the batter unattended after the fermentation is done,the bitter it will taste due to the acids secreted by the microbes present in it. So refrigerate the batter as soon as the fermentation is over. The recipes for Kerala appam I am going to share today without yeast.

What are the ingredients for appam?

Ingredients

  1. White rice- 1 Cup (soaked)
  2. Cooked rice-3/4 Cup
  3. Coconut-1/4 Cup
  4. Sugar-2 tsp 
  5. Water-1 cup +1 tbsp
  6. Baking soda-1 pinch
  7. Salt 

 Preparation

  • Wash the rice well for 2-3 times in running water. Then soak the rice for 4 hours.
  •  After 4 hours drain the water from the rice. Transfer it to the blender, add cooked rice, coconut, sugar, and water. Blend it until to get a smooth batter.
  • cover the batter bowl with a lid and leave it in a warm place.
  • Leave the batter untouched for at least 8-10 hours. After the rest, the batter would have doubled. The batter would be foamy like below. 
  • After fermentation, add salt add baking soda into it and mix well.
  • Now to make appam, heat pan or appa Chatti until hot ladle some batter into pan in the middles spread with the back of the spoon to a thick round.
  • Cover the pan and let the appam cook.
  • Make all appam this way.

Method

*Cover the pan and let the appam cook.
*Serve the appam hot.
