How To Make Perfect Kunhi Kalathappam

Kunhi kalathappam is a traditional sweet snack available in most of the bakery shops in Malabar area. Kunhi kalathappam is not similar to that of a kalathappam recipe.Very simple ingredients give you such a tasty and healthy evening snack. It is originated from Malabar (north Kerala, Kannur, Calicut}and is made with white rice, biriyani rice and sugar. It's more popular in Kannur. Kannur people make this dish a delicacy and it is well served to guests and relatives on special occasions. I still remember these snacks which were regular at homes for our tea-time snacks. But these days with the introduction of bakery snacks, people dislike making such snacks instead they depend more on store-bought snacks. Compared to other appam recipes, Kunhi kalathappam is a relatively easy recipe and it would take about 1-2 hours for preparation.

What are the ingredients for Kunhi Kalathappam?

Ingredients

White Rice-1/2 cup
Jeerakashala Rice / Biriyani rice-1/2 cup
Cardamom-5
Sugar-1/2 cup
Salt-1 Pinch
Cooked Rice-2 tbsp
Water-1/4 cup
Oil for frying

Preparation
  • Wash and soak the rice in water for 3 hours
  • Drain the rice and grind the rice along with sugar, salt, cardamom, cooked rice, and water.
  • The batter should be smooth consistency. When the batter is ready strain and pour the batter into a bowl, mix well.
  • Keep this batter for 1 hour.
  • After heat some coconut oil in a work or deep Kadai.
  • Take a ladle full of batter and pour into the hot oil. Do not turn the appam upside down to cook.
  • To cook the top part,  with the help of a spoon, pour the hot oil from the Kadai onto the top of appam until it is cooked.
  • Appam should have a white color and the sides should be light golden brown.
  • Take it off from the pan and keep it on tissue paper for draining excess oil.

Method
