How to make chicken roast / Dry chicken curry

Chicken roast is the mouth-watering delicious side dish for chappathi, porotta or paratha, roti, pathiri, ghee rice even plain rice. Chicken roast can be made as per non-veg lovers food choice. Based on the way of cooking and food culture, usually north Indians follow their method as per taste. but south Indians are making completely a different way. Today I am showing with you a different Chicken roast recipe following in our area. Chicken roast recipes are either can make gravy version and completely dry version. The fiery red color and the delicious gravy of the Chicken curry is sure to impress you as well. You can cook this dish easily at home for a dinner party as a side dish. This basic recipe though which tastes fabulous, so here goes – Spicy Kerala Chicken Roast for you and your family to enjoy.

How To Make Chicken Roast?

What are the ingredients for chicken roast?


For Marination

Chicken-500 grm
Yogurt-2 tbsp

For Gravy

Coconut oil-2 tbsp
Ginger garlic paste-1 1/2 tbsp
Green chilly-3
Turmeric powder-1 tsp
Chilly powder-2 tsp
Coriander powder-1 1/2 tsp
Pepper powder-1/2 tsp
Garam masala-1/2 tsp
Fennel seed powder-1/2 tsp
Tomato-2Curry leaves
Ghee -1 tsp


Marinate the chicken pieces in curd and salt for 30 minutes. If you need to leave it longer, refrigerate it.

Heat coconut oil in a Kadai add ginger garlic paste saute well until the raw smell goes. Add onion slices, green chilly, and salt mix well- saute till onion light brown.

Add turmeric powder, chilly powder, coriander powder, pepper,garam masala, fennel powder and mix well saute them till its raw smell goes then add tomato to the masala cover and cook well

Now you can see the oil coming out from the masala
Its time to add the marinated chicken and mix well

Cover the pan cook on medium flame

Stir well occasionally
Check the salt. Finally when the chicken is fully done(u can see the oil is oozing out from the gravy and the chicken is fully covered with gravy)
Mix well and cook for another 2 minutes.
Finally, sprinkle ghee and some curry leaves.

This chicken roast will be thick if you want gravy you can add hot water as you wish
Yummy chicken roast ready to serve
